This light, crisp salad is perfect for warm evenings on the patio.
- 1 cup jicama, spiral sliced
- 1 cup kohlrabi, spiral sliced
- 1 tsp olive oil
- 2 Tbsp lemon juice
- stevia to taste
- 1 tsp salt
- 1 tsp of finely chopped mint leaves
Stir together and refrigerate for 1 hour or overnight.
