Pumpkin Pie Chocolate Chunk Cakes

You're in for a treat when you make these cakes with the cinnamon pecan whipped cream.



Recipe by Janeva Eickhoff

Ingredients: (Cakes)
  • 1 Ideal Protein Butterscotch Pudding mix, dry
  • 1 Ideal Protein Chocolate Chip Pancake mix, dry
  • 1 tsp baking powder
  • 1 tsp Splenda
  • 1/3 cup liquid egg whites
  • 2 tsp olive oil
  • 1/2 tsp pumpkin pie spice
  • 2 Tbsp water
  • 1 Tbsp Walden Farms Maple Syrup
  • 1 Tbsp Walden Farms Caramel Syrup

Ingredients: (Whipped Cream)
  • 2 – 3 Tbsp Walden Farms Marshmallow Dip
  • ¼ – ½ tsp cinnamon
  • ½ tsp *pecan flavor extract, optional

Directions (Cakes):
  1. Preheat oven to 350.
  2. In a medium bowl, mix together the dry ingredients.
  3. Add liquid ingredients; stir to mix.
  4. Spray a regular size muffin tin with cooking spray and add batter making 6 muffins.
  5. Bake 10 minutes.

Directions (Whipped Cream):
  1. In a small bowl, add all ingredients. Whip with a fork until light, smooth and creamy.

To serve cakes: Place a dollop of the whipped topping on a plate and spread out, set cake(s) on top and serve. You may also frost the top of the cooled cakes as an alternative serving option.

Servings: 6 regular size muffin cakes = 2 unrestricted; 3 regular size muffin cakes = 1 unrestricted;

Easter Ideas for Family Meals

Many families and groups gather over the Easter long weekend to enjoy time together and a good meal. Here we've included some ideas for adapting traditional dishes, and some new suggestions, to help you be healthy through the holiday.

Glazes

Ham is a popular option for Easter dinner. When making your glaze, you can try using Walden Farms Maple Syrup or another sweetener (like Stevia or Splenda) in place of other sugars or honey.

Main dish recipe options:
Cinnamon Pork with Turnip
Pan Seared Pork Chops
Garlic Roast Chicken

Savoury Sides

Scalloped Potatoes are popular this time of year. You can make a low-carb version using turnip or celery root instead of potatoes, and making your sauce with an Ideal Protein soup (mushroom, broccoli and cheese, leek).

If you prefer a mash, try one of these options:

For vegetable sides, use vegetables with a low Glycemic Index. Try steaming, sauteing or roasting them with your favourite herbs and spices.

Luscious Treats for Valentine's Day

It can be a challenge in February as Valentine's Day approaches. Chocolate is everywhere. Thankfully, Ideal Protein and LillyPad have some sinfully delicious options to get you through!

Valentine's Dinner Ideas

Appetizer
It's best to avoid snacking before the main meal, but if you need a little something to get you through, try raw vegetables like cucumber slices or broccoli florets with a little Walden Farms* dressing. A cup of warm broth, seasoned with herbs, soy sauce or other allowed seasonings, can also be a nice start to the meal.

Main
"Pasta": Eggplant Lasagna and Mock Alfredo are options, or use Ideal Protein Plain Rotini or Tomato Basil Rotini tossed with oil and spices
Steak: Grill up your preferred cut or try Steak with Chimichurri sauce
Chicken: This Garlic Roast Chicken recipe is a great way to serve up chicken breast
Pork: Pan Seared Pork Chops or try this month's Cinnamon Pork slow cooker recipe
Fish: Use your favourite sugar-free spices or try some tasty Crab Cakes

Cauliflower Rice

Ideal Protein Chocolate Pudding Puffs

Thanks It's a Breeze clinic for this yummy recipe, which is not only diet-friendly but delicious too! 

Ingredients:


  • 1 Ideal Protein chocolate pudding mix
  • 2 drops of vanilla or almond extract
  • 2 oz of cold water
  • 2 egg whites
  • 1/2 teaspoon of baking powder
  • 2 tablespoons of Walden Farms Chocolate Syrup
  • 2 tablespoons Walden Farms Marshmallow Topping

Directions:


  1. Beat water, vanilla and egg whites in a mixer until a fluffy consistency appears (about 2 minutes) In a separate bowl, combine pudding mix and baking powder. 
  2. Gently fold in the baking powder and pudding mix into first bowl. 
  3. In a non-stick muffin tin, pour mixture into mini or regular muffin tin. Bake at 350 degrees for 18 minutes. 
  4. Pour chocolate syrup and marshmallow on top and enjoy!
