This curried vegetable recipe is a warm savoury side dish, perfect for the cold weather.
- 2 cup celery root, cubed
- 1 tlsp grapeseed oil
- 1 tsp ground tumeric
- 1 tsp curry powder
- 1 tsp sea salt
- 1 tsp ground black pepper
- 2 tbsp fresh cilantro
- Peel and cut celery root into 2 inch cubes.
- Place in a saucepan with 3 inches of water. Cover bring to a boil then simmer for 5 minutes until just tender. Drain and set aside.
- Heat oil in large non stick saute pan over medium heat. Saute the cumin, turmeric and curry powder for 1 minute. Add the celery root and saute until cooked. Toss with salt, pepper and cilantro.
