Jicama is a root vegetable that can take as long as 9 months to grow. Sometimes called Mexican yam, turnip or potato, it has a sweet starchy flavour and is often eaten raw.
So what do I do with it?
Jicama is fantastic raw as a snack or in salads and can also be added to dishes like other root vegetables. We'll be posting some of LillyPad's jicama recipes later this month.
